Brown Rice Meatloaf
1 lb. Lean Ground Turkey, Venison, or Chicken 1 cup Cooked Brown Rice 1 Egg 3/4 cup Plain Yogurt, low-fat 1/2 cup Onion, finely chopped 1/2 cup Celery, finely chopped 1/2 cup Red or Green Bell Pepper 1 tbs. Soy Sauce, low sodium 1 tsp. Sea Salt 1/2 tsp. Black Pepper 1 tsp. each Oregano and Basil |
Preheat oven to 350 degrees. In a large bowl, combine all ingredients. Place in a loaf pan that has been greased with non-stick spray. Bake for about 1 hour. Remove from oven and let stand 10 minutes before slicing. Makes 6 servings. |
